Whipped Coconut Cream

Ingredients

  • 1 Can coconut cream
  • 1 T liquid sweetener of choice
  • I like agave myself so that it doesn’t over power the flavor of the desert. You can also use 2 T confectioners sugar if you like.
  • 1/2 tsp vanilla
  • or any flavor your looking for. You may need to play around with this one to get what the exact taste you are looking for. Try coconut essence, cinnamon, vanilla beans..

Instructions

  1. Place can in the fridge overnight.
  2. Open the can without shaking it or turning upside down.
  3. Carefully spoon out the top layer of opaque white dense coconut that has gathered at the top of the can. Spoon cream into a mixing bowl. You will be left with a varied amount of white syrup-y looking translucent liquid. Do NOT put this in the mixer.
  4. Add sweetener of choice.
  5. Turn your mixer on low till all is well incorporated.
  6. Whip the coconut milk froth until creamy. Start on low and move to a higher speed, move the beater in an up and down motion to infuse the mixture with as much air as possible.
