Add 3/4 C coconut mana/ coconut butter/ fine chopped-shredded unsweetened coconut or mix them to get consistency into leftover portion in blender/ food processor.
Juice from 1-2 limes (about 3 T to 1/4 C) *sprinkle some lime zest in if you like
1 2oz dropper of coconut flavor (optional)
Instructions
Chop all crust ingredients in food processor until a crumbly crust is formed. Press contents firmly into the bottom of a parchment paper lined 8” spring form or 2- 3” lined spring forms.
Blend your base layer ingredients together in a high powered blender (careful not to burn them by leaving it running too long) Take half of the mixture out once a smooth consistency is reached. Add 1/2 tsp of pure vanilla to portion taken out. Stir well. Pour over crust.
Smooth remaining cashew topping mixture on top of base layer, cover with saran wrap, and put in freezer for at least 2 hours.
